Saffron is the most valuable spice in the world and is well known as ”red gold”.
Iran is the biggest producer of saffron (about 85% of the world’s saffron grown in a year equivalent to 390 tons ).
This is the huge number for the most precious spice in the world! Saffron comes from the purple fields located in the east side of Iran which have dry and cold climate.
The most important cities where saffron comes from are Qaen, Gonabad, Torbat Heydariyeh, Taybad and Khaf. Saffron has been used as a colourful and major ingredient in most desserts and main Persian foods.
It is also used in perfume and pharmaceutical industry due to its anti-depressant and sedative properties. Since Iranians believe that saffron is associated with joy and happiness, so they use it in traditional and religious events during the year.
Saffron is not all of the same quality and strength. Strength is related to several factors including the amount of style picked along with the red stigma. Age of the saffron is also a factor. More style included means the saffron is less strong gram for gram because the colour and flavour are concentrated in the red stigmas. Saffron from Iran, Spain and Kashmir is classified into various grades according to the relative amounts of red stigma and yellow styles it contains.
This grade consists of ONLY dark red stigma tips and has the highest quality compared to the other types. Sargol saffron is the pure saffron with no broken stand. Due to accumulation of saffron`s active components in stimas, Persian Sargol has a very strong arom and rich coloring capacity.
