Zahidi (Ghasab) Dates
Zahidi dates are considered as a dry date with a moisture level under 12%. They are medium sized and oval in shape with a gold color and mild sweet taste.
Zahidi dates are grown in Khuzestan, Fars, Bushehr and Kermanshah provinces.
This is considered the most frequently used types of dates in Iran and the majority of this product is consumed in domestic markets, but because of high-quality production growth over the last years, This type of date has been exported all over the world.
Zahidi dates are perfect option for baking as their texture are nutty and chewy and their flavour are buttery.
They can also be added to cereals, puddings, cakes, bread, cookies, ice cream or candy bars. Some times Zahidi dates are processed into cubes, paste, powder(date sugar), jam, jelly, juice, syrup, vinegar and alcohol.
It must be mentioned that there are some other products produced using Zahidi dates, which are popular amongst diabetics because of their low and natural sugar such as palm sugar, chocolate, fruit bars and certain soft drinks.
Zahedi Date can be stored in standard room temperature for around 18 months until 2 years.
They are highly nutritious and a rich source of dietary fiber. They contain iron, potassium, B-vitamins, flavonoids, antioxidants and almost all twenty amino acids.
